So back in January I started this section on my blog and well if you come here often you will know that I then took time away. I posted my first Monthly Meal Monday – January 2017. Well lets just say not to long after did my life flip upside down! Read Where Have I Been? and All In A Month to get a better understanding.
Also I know it is not Monday when I am posting this….
Now that it is summer my least favourite season by the way, that means it is time for the BBQ!!!! There is nothing better than having a few drinks with friends and having a fire and BBQ.
I have learned how to make almost anything on the BBQ. During June I made salmon on it. Let me just say that salmon on the BBQ is completely different! I love it so much! Plus add in some fresh veggies on the BBQ and you’re set for the night!
If you like fish then I suggest trying this! It doesn’t even have to be salmon. All I do is rub some EVOO on the salmon. Then salt, pepper and slices of lemon and the veggies. Rap it all in tin foil and then right on the BBQ on medium-high.
I never time my food so I just let it sit until the salmon is flaky. I really have a bad sense of time! I honestly just look at my food and if it smells done and looks done then it is but if you aren’t as free will as me then time it or use a meat thermometer to see if it is safe to eat.
With this dish I also make an avocado and mango salsa with whole grain rice. All together the taste is perfect together!
Avocado & Mango Salsa
Mango peeled & diced
Red Pepper chopped
1/4 cup Cilantro
Red Onion chopped
Avocado peeled and diced
1 Tbsp lime juice
1 Tbsp Olive Oil
1 Tbsp Coconut Water
Salt & Pepper
Put everything together in a bowl and mix! If you find you can’t stand the taste of cilantro (I think it taste like soap!) you can use parsley instead!
